Eggslut? Egg what?

Yes, you head right, Eggslut...I know what you're thinking...SLUT? Yes, E.G.G.S.L.U.T. Who wouldn't want to eat there!?! For the name alone, I would want to check out what all the hype is. So, why is it called eggslut? I have NO idea. But, it's cute, right? Just wait until you hear what's on the menu... With three locations in the Los Angeles area and one in Las Vegas, the name starts to make a little more sense. #nojudgementhere
The Eggslut in Las Vegas is located on the strip on the second floor in the Cosmopolitan Hotel. We were only in Las Vegas for 24 hours, so we only went once, but walked by it multiple times. Each time, there was a HUGE line wrapping around the corner. Eggslut does have a reputation for having long lines, so much so, that it's a FAQ on their website. But I have to say, in response to why the lines are so long, it really is true, their service was top notch as was our food. It was well worth the wait.
We each ordered the Fairfax and added bacon (because EVERYTHING is better with BACON!). It was a toss up between the Fairfax, and the Bacon, Egg, and Cheese. Everything on the menu sounds delish! But the Fairfax won out, I just couldn't turn down - "cage-free soft scrambled eggs and chives, cheddar cheese, caramelized onions and sriracha mayo in a warm brioche bun." OMG. TO. DIE. FOR.
If you're overly obsessed with breakfast, and specifically breakfast sandwiches, like me - we could probably be BFFs! But, besides the point, you know what I'm talking about when I say how important it is for the egg to be PERFECT. Overly cooked equals a dense and gummy texture, ruining all potential for greatness. But a PERFECTLY cooked egg - is fluffy, light, and softly sinks into your teeth with every bite, packed with a richness that can only be achieved with that PERFECT scramble. For the non breakfast lovers (who are not yet drooling while reading), or non breakfast sandwich lovers (you don't know what you're missing!), I WILL change your mind by the end of this post!
The Fairfax is exactly as described above, plus BACON. Now, without the bacon, it would have been a different experience. Now, why did I HAVE to add the bacon when everything sounds DELICIOUS? I am a huge texture eater, and fully believe that texture can make or break any dish on the planet.

Let's break it down:
Cage-free soft scrambled eggs and chives: Light, airy, and packed with flavor. I love cage-free eggs not just for the richer flavor, but for the color. It's a yellow that looks enhanced in pictures, but is truly THAT yellow to the naked eye.
The soft scrambled eggs are topped with chives, adding a contrast of color, and subtle savoryness.
Cheddar cheese: Sharp, but not harsh. It's the perfect compliment to the richness of the cage-free eggs. Plus, it's just a classic - so you know you can't go wrong!
Caramelized onions: I feel like this is the turning point. Most people have a love or hate relationship with onions. I LOVE them all! But caramelized... drooling. This was the turning point in my decisions to the Fairfax. It added a sweetness, while adding a texture - dual purpose!
Sriracha mayo: Yummmm... Sriracha goes on everything. Decision - SOLD! Creamy, slightly tangy with a mild spice, the perfect compliment to the rich, flavorful cage-free scrambled eggs.
Warm brioche bun: Though this did not play a factor in my decision, you can never go wrong with a warm brioche bun. The buns are soft on the inside with a slight toast on the outside. The brioche was more about the texture than the flavor and paired perfectly to not overshadow any of the main essence of the breakfast sandwich.
Now, I know I just raved about every aspect of this sandwich, so why in the world would I want to go adding bacon? BACON! Everything is better with BACON. Yes, everything.
First bite - Impeccable. Soft crunch through the crust of the brioche, through the fluffy cage-free scrambled eggs topped with a sharp cheddar, a crisp crunch through the hardwood smoked bacon, salt hitting the tongue, mixed with caramelized onions dressed with sriracha mayo, providing the sweet tangy finish to an unforgettable bite. THIS is what a breakfast sandwich should taste like.
I will be back... for another perfect breakfast sammie. Or, maybe even a SLUT.
If by now you're still not convinced that breakfast sandwiches are basically the best thing one earth, Eggslut is still worth a visit. 4 words - SALTED CHOCOLATE CHIP COOKIE. Because all good breakfast sandwiches should be served with a side of cookie! Serious. It's served warm, with crisp edges, chunky sprinkles of salt, and chocolate for days. Melt in your mouth delicious.
